Tsukiji - properly, the Tokyo Central Wholesale Market at Tsukiji - is at the centre of the world's fresh and frozen seafood trade. A mixture of high-tech and ancient techniques, the fast-paced tuna auctions, and the amazing array of seafood make it a truly incredible place. I first visited Tsukiji in 2004, and have been going back occasionally over the last decade to photograph the fish market.
